Kilauea Herbed Goat Cheese & Spinach in Filo

Cheese & spinach pastries

6 sheets filo
8 oz goat cheese
2 oz butter, melted
1 oz sautéed spinach, chopped and chilled
½ oz pureed sundried tomato

Cut 6 sheets of filo into fourths. Brush butter between each layer, except top layer. Mix spinach, tomato and goat cheese. Divide into fourths and place portion on filo. Fold opposite corners of filo to form triangle; brush with butter. Place on cookie sheet and bake at 400 degrees for 10 min. until golden brown.

Sauce

½ c white wine
1/4 tsp chopped shallots
1/4 c cream
3 oz butter
1 T sundried tomato puree
1/4 tsp lemon juice
pinch of salt

In small sauce pot, reduce wine and shallots by half over medium heat. Add cream and reduce by half again. Whisk in butter, sundried tomato, lemon juice, and salt. Place sauce on plate, top with filo and goat cheese triangle. Garnish with chopped garlic chives.
