![]() Crispy Asian Fried Calamari - With spicy sprout saladSource: Chef Willie Bumanglag, Embassy Vacation Resort, KaanapaliCrispy Asian Fried Calamari 3 oz calamari, in bite size pieces ¼ C seasoned flour 3 oz ginger orange marmalade glace 3 oz spicy sprout salad 1 oz infused oil 1 tsp toasted sesame seeds Ginger Orange Marmalade 1 tsp each chopped cilantro, chopped mint, Thai basil 1 T ginger, minced 1 tsp shallots, minced 1 C fresh orange juice + zest of 1 orange pinch chili flakes or Hawaiian chili ½ C orange marmalade In a medium skillet, saute ginger, shallots and chili flakes. Deglaze with orange juice and reduce. Add orange marmalade and simmer at low heat. Stir in all other ingredients; set aside. Spicy Sprout Salad 2 oz kaiware sprouts ½ oz each carrot swirls, julienne cucumber, pickled ginger 1 oz chopped peanuts mint leaves, cilantro leaves, Thai basil leaves ½ C sliced Chinese cabbage pickled ginger Asian seasonings Toss all ingredients together and chill for 15 minutes. Assembly: Heat vegetable oil in medium wok. Wet calamari pieces with water; roll in seasoned flour. Cook in hot oil until golden; drain on paper towel. In a bowl, toss calamari with orange marmalade glaze. Place spicy sprout salad in center of a salad plate, place calamari on top of salad, drizzle sauce around inner rim of plate. Sprikle sesame seeds on salad and drizzle infused oil on dish. (Serves one) ![]() ![]() |
