Big Island Cajun Horseradish Marmalade
4 oz Orange Marmalade
1 t. Horseradish
1 T Fresh Orange Juice
1 T. Cajun Seasoning
1 Pinch Chop Cilantro
Mix all ingredients together and hold ready for service.
Big Island Cajun Chicken Breast.
1 6 oz Chicken Breast
1 T Olive Oil
1 T Cajun Seasoning
Rub chicken breast with the olive oil and dredge on the Cajun seasoning until completely cover.
In a very hot sauté pan add oil and then add chicken breast to completely seared on both sides (being careful because this process may create a lot of smoke), after chicken breast is seared on both sides lower temperature or finish in the oven.
At service time pour l Tbls of Cajun horseradish marmalade on top of chicken.
Shallot or Red Onion Compote:
10 Shallots Or 4 Oz. Red Onions
1 T Vegetable Oil
2 oz White Sugar
½ C Red Wine
Saute shallots or red onions until translucent, add sugar and red wine and let it reduce half way until fairly thickened.
